Whisky mould (Baudoinia compniacensis) also called whisky black or whisky fungus sometimes, is a naturally occurring fungus that thrives on ethanol. When whisky matures in bonds the alcohol that escapes is called “the Angels’ share” and it is this ethanol that whisky mould thrives on. Occurrences and levels of growth increase the nearer you get to a whisky bond (storage and maturation area) but also occurs near distilleries, spirit bottling facilities, cooperages where used barrels are refurbished and manufactured and even bakeries.
